Food Preparation Areas
You need to ensure the walls, floor and other surfaces in
your food areas are able to be cleaned and disinfected
easily.
You need to have a system of working that prevents
cross-contamination between raw and ready to eat foods.
If you have animals, you should ensure they do not have access
to the area whilst you are preparing and cooking for your business.
If they have had access prior to you starting preparation, you need
to ensure all areas are cleaned and disinfected before you
start.
You should ensure that all ingredients for your business are
kept separate from your personal food – this does not necessarily
mean that you have to have a separate fridge, just clear separation
within. Dry ingredients should also be separated.
You need to consider if your kitchen is suitable for the volume
of products you intend to produce – for example, do you have room
to keep products under temperature control if required?
