Food Safety Management System
You are required by law to ensure you have a documented food
safety management system. This should detail how you intend to
produce food safely and specify the monitoring you are undertaking
to verify the system is safe. The Vale of Glamorgan has
produced HACCP documents
as well as some HACCP
forms to get you started but these are more suited to a
larger operations, however, you will need to have something
like it and this can give you some idea of the areas we will look
at.
The Food Standards Agency has produced a pack called
‘Safer
Food Better Business’ (SFBB) which you may find easier to
