Taste of Mexican
True Mexican food it’s a combination of savoury, earthy flavours and a fresh lightness from its generous use of fresh herbs, vegetables and citrus. Discover new flavours or learn the tricks to make margaritas with a twist, cheesy enchiladas, creamy guacamole, mouth-watering churros and chilli-spiked chilli con carne. Get your family and friends around and tuck in to a Mexican fiesta made by you!
You will need to bring along a small list of ingredients each week.

Week One
-Pineapple and chilli margaritas
-Pico de gallo (fresh chopped tomato salsa)
-Enchiladas (tortillas rolled around filling and topped with cheese)
-Chocolate Caliente (Hot Mexican chocolate)
Week Two
-7 Layer dip (hearty appetizer)
- Chilli con Carne (minced beef casserole)
-Tres Leches cake (cake with creamy topping)
Week Three
-Guacamole (avocado dip)
-Mole with chicken (basic sauce to serve over cooked meat)
-Mexican rice (rice with veggies)
-Baked churro chips with caramel and chocolate sauce

Some people escape in dreams of sandy beaches and sunny skies, I escape in dreams of doughy extravaganzas, smoked chipotle peppers and lip smacking good sauces. Kitchen is my comfort zone and my creativity as an artist flourishes in the midst of sizzling pans, candy thermometers and simmering pots. I’m happiest when sharing my table with friends and family discussing our day while enjoying simple, homemade, mouth-watering dishes.
